Hidden in the bustling alleys of Tôn Thất Đạm Market, Ănăn Saigon redefines fine dining, rooted in Vietnamese street food, yet elevated with French culinary technique to the world stage. I’ve been here once before, but this time at The Legacy: Chapter II event of the Overseas Vietnamese community, the experience truly hit differently.

For Chef Peter Cuong Franklin, inspiration doesn’t come from Michelin fame or luxury ingredients, but from his mother, who once ran a humble noodle shop in Đà Lạt. From her steaming bowls of noodles to his daring creations like Beef Pho and Le Petit Banh Mi, every dish carries the echo of her kitchen, refined with French finesse and his own bold vision.

That evening, he merged three tasting menus, the Saigon Tasting Menu, the Chef’s Tasting Menu, and the Pho Tasting Menu, into one seamless journey. Between courses, he shared his life story: from refugee, to investment banker, and finally, to returning home and finding his voice by marrying the soul of Vietnam with French precision.
