What is the dining experience like at one of the oldest omakase restaurants in Saigon?

Omakase in Japanese means “I’ll leave it up to you” or “I trust you.” Imagine placing your entire dining experience in the hands of the chef letting them decide what you’ll eat. Not easy for everyone, but incredibly rewarding once you do.

At Kiyota, with over 10 years of heritage and only 16 seats per night, the experience feels intimate, almost like being invited into someone’s home. You need to book ahead, but it’s worth the wait.

The sashimi plate melted in my mouth, the Sendai Wagyu was out of this world, and the highlight; the sea urchin tuna roll was pure bliss. Towards the end, Chef Sang prepared sushi with such grace that it felt like a delicate dance unfolding in every bite.

Dining here isn’t just about food. It’s about trust, time, and tradition woven into a quiet ritual that makes you slow down and savor.
