Bò Né was born in Saigon, inspired by French steak and eggs; then transformed into something loud, hot, and unmistakably Vietnamese.

Thin-sliced beef is seared in butter, eggs crack straight onto the pan, pâté melts into the sauce ; all served on a cast-iron skillet that arrives still sizzling.

"Bò" means beef. "Né" means to dodge.
The name comes from the moment the dish hits the table ; oil popping, pan crackling, forcing you to né the heat.

So Bò Né literally means: the beef you have to dodge.
